I have put the probe straight in to water, but it says that it is dry, so how does it work?
The meters purely rely on the chemical reaction between the soil and water. To help explain with a bit of science, the meter is like a volt meter but it uses a magnet coil to measure the electrical potential, on a moisture meter the electrical potential comes from the soil which will act as the electrolyte which is effectively a weak battery, the more water there is, the easier the current flows, so the higher the moisture content, whereas no moisture means a very weak current, so very little moisture, therefore the meter can show this on the dial by using the amount of current on the end electrode that is placed in the soil. This is why the meter has to be placed in soil to get the reading, the soil is the battery, if you place the probe in a glass of water, there is no electrolyte (soil) and therefore it will show a reading of dry even when it is sitting in water.
